Ingredients

cups Betty Crocker® Potato Buds® mashed potatoes (dry)

cup shredded Cheddar cheese (4 oz)

cup chopped pecans or cashews
1
cup chopped onion (1 large)
2
tablespoons soy sauce
1
teaspoon dried basil leaves
4
eggs, beaten

Directions

  • 1 Heat oven to 350°F. Grease or spray 15x10x1-inch pan.
  • 2 In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) balls. Place in pan.
  • 3 Bake uncovered 20 to 25 minutes or until brown.

I'm rating these 5 spoons! I read the reviews and ground the nuts in coffee grinder and just added two tablespoons of olive oil for a little more moisture. I added chives and oregano as well and used mixed cheddar shredded cheese. And made a brown gravy from soy sauce. They had a nice firm consistency. Next time I bake up a batch, I'm going to add them to my home made spaghetti sauce. Delicious!

I just had this for lunch. It's not authentic English ccmbuuer sandwich but I make them as appetizers to take to a party and everyone LOVES them. Cut crusts off a firm white bread, cut into 4 pieces, spread with creamed cheese, place a slice of ccmbuuer on top, sprinkle with dried dill weed. Put on a platter.

I LOVED these! I do wish I would've read the previous comments before I made them. Definitely would've used smaller or ground nuts and added more spices for flavor. I didn't think they were overly dry and the texture was impressive. My meat-eating, protein lovin' husband loved them, but my son didn't appreciate the 'crunch' from the pecans. I'm a vegetarian and will use this recipe for my family and for company!
