Jamaican Ham and Bean Soup

Ingredients

tablespoon vegetable oil

cup frozen chopped onion

cans (16 oz each) Old El Paso® refried beans
1
can (11 oz) Green Giant® SteamCrisp® Mexicorn® whole kernel corn with red and green peppers, undrained

can (11 oz) Green Giant® SteamCrisp® white shoepeg corn, undrained
1
can (4.5 oz) Old El Paso® chopped green chiles, undrained
1/2
cup Old El Paso® Thick 'n Chunky salsa (any variety)
1 3/4
cups Progresso® chicken broth (from 32-oz carton)
1
teaspoon Jamaican jerk seasoning (dry)
1
lb lean cooked ham, cut into 1/2-inch pieces
1
can (2 1/4 oz) sliced ripe olives, drained
1/3
cup lime juice

tablespoons sour cream
6
lime slices, if desired

  • 1 In 3-quart saucepan, heat oil over medium heat. Add onion; cook 3 to 4 minutes, stirring frequently, until tender.
  • 2 Stir in refried beans, both cans of corn, chiles, salsa, broth and jerk seasoning. Heat to boiling. Reduce heat to low; simmer 5 minutes, stirring occasionally.
  • 3 Stir in ham, olives and lime juice. Cook 3 to 4 minutes, stirring occasionally, until thoroughly heated. Ladle soup into individual bowls. Top each serving with 1 tablespoon sour cream and lime slice.

This is a good recipe. Regarding the previous comments, if you are vegetarian you can easily adapt this recipe for your needs, as I can adapt vegetarian recipes to include meat. And for the comment before mine, I am Thai and there is a plethora of "Thai" recipes that aren't true to real Thai ingredients and preparation. This is because the recipes are simply meant to taste Thai, like this one is meant to taste Jamaican. I don't take offense because it means people are being creative in trying to make Thai dishes - they like Thai (or in this case Jamaican) cuisine so they use easier, more familiar ingredients and cooking methods. It's nothing against Jamaican food. If you are a fan of spice and beans this soup is great! I add some extra cayenne for kick. Cheers!

I am Jamaican and a very good cook of Jamaican dishes. This is NOT a Jamaican recipe. We never use refried beans, salsa, chillies,sour cream,lime in soup etc in the preparation of our meals/soups. Nowhere in Jamaica would you ever find this recipe listed as Jamaican. Please be careful about not misrepresenting our cuisine. I love Betty Crocker products and recipes but dislike recipes being labelled incorrectly as Jamaican when they are not.

Why bother looking for vegetarian refried beans if you are putting ham in the soup? Get this out of the 'meatless main dish' section.
