Simple ingredients come together beautifully in this cooling dessert, with the help of your freezer and a bit of melted chocolate. The recipe is easy to make ahead, and it's a welcome option for healthier eating.
cubes (1/2 inch) fresh pineapple
fresh strawberries, cut in half
medium bananas, cut into 1/2-inch cubes (about 24)
kiwifruit, peeled, cut into 1/2-inch cubes (about 24)
bottle (7.25 oz) chocolate topping that forms hard shell
(8-inch) bamboo skewers
Thread fruit alternately onto skewers, using approximately 2 pieces of each per skewer; place in single layer on cookie sheet with sides. Freeze 1 hour or until fruit is frozen. About 5 minutes before serving, drizzle fruit with chocolate topping; return to freezer until ready to serve.
Add or replace fruit called for within the recipe with other fresh fruit such as grapes, raspberries, blackberries or cubed mango.
Frozen fruit skewers can be placed in a resealable plastic bag and stored in freezer for up to 2 weeks.
