When cooked, the lean white flesh of the tilapia is sweet, mild, tender and has no "fishy" flavor. The tilapia at your market may be from a fish farm in this country or from the fresh waters of Colombia or Coasta Rica.
In the past, if you wanted to add the sweet-smoky flavor of roasted red bell peppers to your cooking, you had to roast, then peel the ripe peppers. Now roasted bell peppers are available by the jar. The roasted peppers make a tasty addition to spreads, soups, pastas and salads.
