medium onion, chopped (1/2 cup)

cups coleslaw mix

cup uncooked instant rice

cup water

teaspoons paprika

teaspoon salt

can (15 ounces) chunky Italian-style tomato sauce

Directions

  • 1 Cook beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain.
  • 2 Mix beef mixture and remaining ingredients in 3 1/2- to 6-quart slow cooker. (Cooker will be very full, but cabbage will cook down.)
  • 3 Cover and cook on low heat setting 4 to 6 hours or until cabbage is tender.

Expert Tips

It is important to cook the ground beef before adding it to the cooker. Because the beef is ground, there is a greater risk that bacteria may start to grow before the temperature inside the cooker gets high enough.

No coleslaw mix on hand? Substitute 4 1/2 cups shredded cabbage and one shredded carrot. If you own a food processor with a shredding attachment, this is a great time to use it.

Place squares of process American cheese over the top of the finished casserole, or sprinkle with shredded Cheddar cheese. Cover and let it stand a few minutes so the cheese melts. Kids will love it!

I made this on 8/19/10. I mad the following changes:(2)14oz bags of cole slaw mix; 1 can stewed tomatoes, 1 sm can tomato sauce.I cooked it on the stove for 2 hours and then added 1/2C regular rice and 1 C water for the last 25 minutes. It was delicious. I will make this again but add another can of tomatoes to it.
