Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup uncooked regular long-grain rice
  • 1 medium onion, chopped (1/2 cup)
  • 2 1/2 cups water
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon chili powder
  • 1/8 teaspoon garlic powder
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 can (8 oz) tomato sauce
  • 1 large tomato, seeded and chopped (1 cup)

    In 10-inch skillet, heat oil over medium heat. Cook rice and onion in oil about 5 minutes, stirring frequently, until rice is golden brown and onion is crisp-tender.

    Stir in remaining ingredients except tomato. Heat to boiling; reduce heat. Cover and simmer 20 minutes, stirring occasionally. Stir in tomato. Cover and simmer about 5 minutes or until rice is tender.

    Omit oil. Cut 6 slices bacon into 1-inch pieces. In 10-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Remove from skillet with slotted spoon and drain on paper towels. Drain all but 2 tablespoons bacon fat from skillet. Cook rice and onion in bacon fat over medium heat about 5 minutes, stirring frequently, until rice is golden brown and onion is crisp-tender. Continue as directed in step 2. Stir in bacon just before serving.
