This no-bake cookies and cream pie is set to become your summer favorite! It’s a truly effortless recipe—there’s no need to turn on the oven. It’s a no-bake affair, no heating up the kitchen! All you have to do is press, mix, layer, and chill. The cool, creamy filling is rich in flavor and light in texture with bits of cookies throughout, making a perfect complement to the crunchy cookie crust. Plus, the classic combination of cookies and cream is always a crowd pleaser, making this pie the ultimate summer showstopper for the next backyard BBQ!

Recipe Ingredients

Here’s what you’ll need to make this no-bake cookies and cream pie.

Creme-filled Chocolate Sandwich Cookies: The basis for the entire pie. From crust to filling, these classic sandwich cookies are the star. 

Butter: The binder that holds the crust together. Since this is a truly no-bake pie and butter firms up when cold, it provides the perfect glue for holding the crumb crust together.

Cream Cheese: Part of the creamy filling mixture, cream cheese provides rich flavor and stability. 

Marshmallow Creme: This sweet, creamy spread is also known as marshmallow fluff. It adds a delicious marshmallowy flavor and a sweetness that contrasts with the depth of the cocoa in the cookies. 

Whipped Topping: Thawed frozen whipped topping gives the pie filling a deliciously light texture, cutting the richness and keeping it from being too heavy. Feel free to substitute in whipped heavy cream.

Vanilla: This flavoring reinforces the cookies and cream vibe by adding fragrance and classic flavor. 

How to Make No Bake Cookies and Cream Pie

1. Make the No-Bake Crust

Crush the cookies in a food processor until sandy and fine. You don’t have to remove the creme filling; blend it in, and along with the butter, it will help hold the crust together. You can also smash the cookies in a heavy-duty resealable plastic bag and crush with a rolling pin. Then you add the butter and press it into your pie pan!

2. Make the Cookies and Cream Filling

To make the filling, blend softened cream cheese with powdered sugar until creamy and smooth, then beat in one container of marshmallow creme before folding in some whipped topping or freshly whipped cream. Then a generous helping of crushed cookies gets folded right in.

3. Assemble the No-Bake Cookies and Cream Pie

Once you’ve prepared your crust and filling, it’s just a simple assembly situation from here. Spread half of the filling into the crust and layer on about 7 cookies, pressing them down gently into the filling. Spread the remaining filling on top, making sure to cover the cookie layer completely. There will be a lot of filling, but it should be stable enough to hold up, so don’t be afraid to pile it on!

4. Chill the No-Bake Cookies and Cream Pie

No one wants to wait for pie to chill, but this step is important for the structural integrity and texture of the pie. Plan ahead and your patience will be rewarded with this dreamy pie.

5. Serve No-Bake Cookies and Cream Pie

This pie can be served simply with a fork, but if you’d like, you can try adding whipped cream, crushed cookies, or a drizzle of fudge or chocolate topping that forms a shell on top!

How to Store No Bake Cookies and Cream Pie

Refrigerator

You can store leftover Cookies and Cream Pie in the refrigerator for 4 days, covered in plastic wrap. It’s necessary to refrigerate this pie due to the cream cheese.

Freezer

Double wrap the entire pie or portions of the cookies and cream pie in plastic wrap and freeze for up to one month. Thaw in the refrigerator overnight.

Possible Variations

The instant I tasted this pie I started dreaming up other flavor combos. I think a hint of peppermint extract would give you a mint chip vibe, or peanut butter whipped into the filling for the classic pb and chocolate duo! You could also make this pie with any number of cookies (chocolate chip cookies for a cookies and milk pie?!), the possibilities are really endless.

Ingredients

Crust

  • 22 creme-filled chocolate sandwich cookies
  • 2 tablespoons salted butter, softened

Filling

  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 jar (7 oz) marshmallow creme
  • 1 container (8 oz) frozen whipped topping, thawed, divided
  • 19 creme-filled chocolate sandwich cookies, divided

Garnish

  • Crushed creme-filled chocolate sandwich cookies

Instructions

  • Step 
    1

    Add the 22 cookies to the bowl of a food processor and pulse until you get fine crumbs (or smash in a bag with a mallet or rolling pin). Add the softened butter and pulse to combine. The crumbs should stick together when pinched.

    Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie plate. Chill the crust while you make the filling.

    In a bowl, combine the cream cheese with the powdered sugar and vanilla (or just use the food processor bowl you used for the crust) and mix until smooth. Mix in the marshmallow creme until combined.

    Fold in 3/4 of the container of thawed whipped topping until completely combined. Reserve the remaining whipped topping for the garnish.

    Crush 12 more chocolate sandwich cookies into pieces, they can be chunky, fold them into the filling mixture.

    Spread half of the filling into the chilled pie crust. Top with the remaining 7 cookies (use more if you can fit!) and gently press down into the filling.

    Chill the pie for at least 3 hours before slicing and serving. Top with reserved whipped topping and more crushed cookies.
