tablespoon butter
medium onion, thinly sliced
package (8 oz) sliced fresh mushrooms (about 3 cups)
package (1 oz) Old El Paso™ taco seasoning mix
soft white or yellow corn tortillas (6 inch)
cup chopped fresh cilantro
cup crumbled queso fresco cheese

    In large skillet, melt butter over medium heat. Cook onion in butter about 15 minutes, stirring occasionally, until golden. Add mushrooms and taco seasoning mix. Cook 3 to 5 minutes longer, stirring occasionally, until onion and mushrooms are soft. Remove from heat; cover to keep warm.

    Wrap tortillas in microwavable paper towel. Microwave on High about 20 seconds or until warm. For each taco, stack 2 tortillas; spoon mushroom-onion mixture evenly over tortillas. Sprinkle with cilantro and cheese.

Expert Tips

  • For extra heat, add a few dashes of red pepper sauce to the mushroom-onion mixture.
  • Can’t find queso fresco? Oaxaca cheese and farmer cheese are excellent alternatives.
