Mom’s Ultimate Lettuce Wraps

This Thai classic makes a fun group dinner, with everyone gathered around the table and to choose the ingredients for their wrap and created their own customizable meal.

Ingredients

  • 1 pound ground turkey
  • 8 medium green onions, sliced (1/2 cup)
  • 1/4 cup coarsely chopped carrots
  • 1/4 cup diced red bell pepper
  • 1 teaspoon grated gingerroot
  • 2 cloves garlic, finely chopped
  • 1/2 cup fresh bean sprouts
  • 1/3 cup soy sauce
  • 1/3 cup packed brown sugar
  • 12 medium iceberg or Bibb lettuce leaves, rinsed, patted dry with paper towel

    In 10-inch nonstick skillet, cook turkey over medium-high heat, stirring frequently, until no longer pink; drain and return to skillet. Stir in onions, carrots, bell pepper, gingerroot and garlic. Cook 2 minutes, stirring occasionally, or until vegetables are crisp-tender.

    Add the bean sprouts, soy sauce and brown sugar. Cook 2 minutes, stirring occasionally, to blend flavors.

    To serve, spoon turkey mixture onto each lettuce leaf; wrap around filling. Serve warm.

    Get Spicy! For a touch of Thai Peanut flavor, add a teaspoon of peanut butter and a teaspoon of spicy Thai chili sauce after adding the brown sugar. Serve your wraps sprinkled with chopped peanuts.

    These wraps are equally delicious when served in Endive boats and Butter Lettuce leaves.
