What's better than a decadent meatball sub slathered in rich tomato sauce and melted cheese? All that goodness tucked in a buttery biscuit! That's right, we just may have created the ultimate snack with this Meatball Sub Bites recipe! And here's the great news: they're super quick to make because there's virtually no prep, thanks to some fantastic premade ingredients. Of course, they start with soft, buttery Immaculate Baking Company™ Organic Flaky Biscuits. All you’ll need to do is put the biscuits in a muffin pan, then layer on the mozzarella, marinara sauce and meatballs, slide them into the oven for a short bake and presto! Scrumptious Meatball Sub Bites! They'll be perfect as an impromptu get-together snack whether it's a game day, a movie night or your book club. They're so easy-peasy to put together; you could even make them as an after-school snack when the kiddos get home. They'll love to help you make them—and they'll love eating them even more.

Ingredients

  • 1 can (16 oz) refrigerated Immaculate Baking Co.™ Organic Flaky Biscuits (8 Count)
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/3 cup marinara sauce (from 24-oz jar)
  • 16 frozen Italian-style beef meatballs (1/2 oz each), thawed
  • 3 tablespoons shredded Parmesan cheese

Steps

    Heat oven to 350°F. Spray 16 regular-size muffin cups with cooking spray.

    Separate dough into 8 biscuits; separate each biscuit into 2 layers. Place biscuit halves in sprayed muffin cups, pressing to cover bottom and slightly up sides of cups.

    Sprinkle 1 tablespoon mozzarella cheese in each biscuit-lined cup. Spoon 1 teaspoon marinara sauce over cheese in each cup.

    Press 1 meatball into sauce and cheese mixture in each cup. Top each meatball with about 1/2 teaspoon Parmesan cheese.

    Bake 18 to 22 minutes until biscuits are deep golden brown and meatballs are hot (at least 165°F in center). Cool 5 minutes in pan; remove from pan with metal spatula.

    Remember to spray your muffin cups with cooking spray prior to building your Meatball Sub Bites, and keep the cheese tidy—both will help keep the bites from sticking to the pan. If they do stick, run a metal spatula around the edges of each biscuit, and they should slide right out.
