Fall is officially upon us, and what better way to celebrate this time of year than with a delicious, seasonally-inspired treat! The cozy flavors of autumn begin to make their appearance in September, and I just adore this time of the year! Apples and cinnamon are one of the best flavor pairings so combining them into a beautiful cake is almost second nature!

Ingredients

Apple Compote

  • 2 apples, peeled cut into 8 slices
  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Maple Glaze

  • 2 cups powdered sugar
  • 3 to 4 tablespoons milk
  • 1/2 teaspoon maple extract

    Preheat the oven to 350°F. Spray a 10-cup fluted tube cake pan with nonstick baking spray and coat in 2 tablespoons of granulated sugar. Tap off any excess sugar.

    In a large bowl, mix together spice cake mix, chopped apples, and pecans. Toss together, ensuring the apples and pecans are coated in cake mix. Set aside.

    In a separate bowl, mix together 3/4 cup milk, eggs, and sour cream. Whisk until smooth. Pour into the spice cake mix mixture and fold together until just combined.

    Pour batter into prepared pan and bake for 35-40 minutes, until a toothpick comes out clean. Allow the cake to cool in the pan about 10 minutes; then remove cake from pan onto a wire rack to cool completely.

    Make the apple compote by placing sliced apples into a saucepan. Add lemon juice, brown sugar, cinnamon, and nutmeg. Toss together and allow the apples to sit for 10 minutes.

    Place pan onto the stove over medium heat and cook apples or 15 minutes, stirring occasionally. Cook until apples have softened slightly and juices have begun to thicken slightly. Remove from heat and allow to cool completely.

    Make the maple glaze by whisking together powdered sugar, 3 tablespoons milk, and maple extract. Whisk until smooth.

    Drizzle maple glaze onto cool cake and top with apples. You can also top with any leftover chopped pecans if desired.
