Ingredients

  • 3 tablespoons butter
  • 1 large onion, cut in half, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 prebaked ultra thin pizza crust (12 inch; from a 10-oz package)
  • 1 cup whole berry cranberry sauce (from 14-oz can)
  • 1/3 cup pomegranate seeds
  • 3/4 teaspoon grated orange zest
  • 1/2 cup crumbled chèvre (goat) cheese (2 oz)
  • 1 tablespoon chopped fresh chives

    In 10-inch skillet, melt butter over medium heat. Add onion, salt and pepper flakes; cook about 20 minutes, stirring occasionally, until onion is browned and caramelized. Remove from heat.

    Heat oven to 400°F. Place pizza crust on ungreased cookie sheet. In small bowl, mix cranberry sauce, pomegranate seeds and orange peel. Spread over crust. Sprinkle cheese over cranberry mixture; spread onions over top.

    Bake about 12 minutes or until cheese is melted. Sprinkle with chives.

    Cook the onions as directed in Step 1; transfer to a microwavable bowl. Cover and refrigerate up to 24 hours in advance. When you're ready to make the pizza, heat the onions in the microwave on High about 30 seconds or until warm. Assemble the pizza and bake as directed.

    Pomegranate seeds can be found in ready-to-use containers in the produce section of many larger grocery and discount stores during the fall and winter. Or, to remove the seeds from a pomegranate, you will need a sharp knife and bowl of cold water. Score the pomegranate skin from top to bottom about 5 times, evenly spaced. Hold the pomegranate under water in the bowl, and pull it apart into sections. Remove the seeds with your fingers or a small spoon while holding it under water. The seeds will sink to the bottom, and the skin and membrane will float to the top. Remove the membrane with your fingers, and drain the seeds in a strainer.
