They may seem like the ultimate fancy party food, but chocolate covered strawberries are actually very easy to make. All you need is fresh berries, melted chocolate and a bit of time to dip them and let them chill. Chocolate dipped strawberries are an elegant decoration for a layer cake, a beautiful addition to a dessert tray or a lovely centerpiece for a special occasion. MORE+ LESS-

Ingredients

pint (2 cups) medium-large strawberries (18 to 20 strawberries)
1/2
cup semisweet chocolate chips or white vanilla baking chips
1
teaspoon shortening or vegetable oil

    Gently rinse strawberries and dry on paper towels (berries must be completely dry). Line cookie sheet with waxed paper.

    In 1-quart saucepan, melt chocolate chips and shortening over low heat, stirring frequently. Remove from heat.

    Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into saucepan. Place on waxed paper-lined tray or cookie sheet.

    Refrigerate uncovered about 30 minutes or until chocolate is firm, or until ready to serve. Store covered in refrigerator so chocolate does not soften (if made with oil, chocolate will soften more quickly at room temperature).

Expert Tips

  • Wash and completely dry the berries on a clean kitchen towel before you dip them—any water will cause the chocolate to seize up.
  • Make Tuxedo or marbled strawberries: melt both dark and white chocolates, keeping them warm in double-boilers (or in metal bowls sitting over saucepans filled with simmering water). Dip the berries, holding them by the calyx (green leaves) or stems, into either the dark or white chocolate. Then drizzle the opposing chocolate in a web design or pull a toothpick through to marbleize the chocolate. Place the berries on the wax paper-lined baking sheets and refrigerate.
  • Sprinkle the just-dipped berries with finely crushed peppermint candy or finely chopped pistachios.
  • Arrange these elegant berries around the base of a cake, or place on top to dress up any dessert.
