They cook up soft and fluffy, with an almost custardy middle. Thick and rich Greek yogurt makes these pancakes into a hearty breakfast with a boost of protein that will satisfy your hunger and sweet tooth. Bisquick™ makes these pancakes easy and effortless.

Greek Yogurt: This style of yogurt has more protein than regular yogurt. Since it is strained of excess liquid, the resulting yogurt is thick, tangy, and protein rich.

Baking Mix: The classic Bisquick™ baking mix makes these pancakes a cinch to prep and guarantees a perfectly fluffy and delicious pancake.

Milk: Milk makes the batter less thick, preventing a heavy, dense pancake. We call for 2% in this recipe but really any kind will work.

Eggs: Eggs bring additional lift to the pancakes, as well as richness and protein.

Other Ingredients You’ll Need: Butter and syrup.

How to Make Bisquick™ Protein Pancakes

Here’s a brief look at how to make perfect Protein Pancakes.

1. Make the Batter

Since Greek yogurt is extra thick, the milk, eggs, and butter help thin out the batter. Try not to overmix the batter, it should be mostly smooth with some lumps throughout.

2. Cook the Pancakes

Cook the pancakes over medium heat in a nonstick skillet so they don’t brown too fast before flipping. You can brush the surface of the skillet lightly with butter for extra non-stick insurance if you like. The pancakes are ready to flip when bubbles appear on the surface.

3. Serve and Enjoy

Serve these pancakes warm with butter and syrup or boost the protein even more with a smear of peanut butter.

How to Store and Reheat Bisquick™ Protein Pancakes

These pancakes reheat well and are great eaten shortly after making or after freezing and reheating. Follow these tips for storing and reheating these pancakes.

Freezer

Make the pancakes as directed and place in a single layer on one or two parchment paper-lined baking pans. Freeze on the pans until solid then transfer to an airtight freezer container or resealable food storage freezer bag. Store for up to 1 month.

Reheating

Defrost and reheat pancakes in a single layer on a plate in the microwave for 30 seconds. Cook an additional 15 to 30 seconds if there are cold spots.

    Heat a wide, flat skillet over medium heat.

    In a large bowl, mix the baking mix, yogurt, milk, and eggs until almost combined. Fold in the melted butter until completely blended.

    Pour 1/2-cup portions of batter onto the hot skillet. Use the back of the ladle or spoon to gently spread the batter if needed. Cook until bubbles begin to form on the top of the pancake. Flip; continue cooking until golden and puffed, about 1 to 2 minutes.

    Serve warm pancakes with butter and syrup.
