Fresh Berry Slab Pie

Summer days never feel quite complete without a cool, sweet treat. The good news is that, thanks to this Fresh Berry Slab Pie recipe, you’ll never have to go without one. All you need is 20 minutes of prep time and seven simple ingredients—including three kinds of fresh berries—to make this perfectly in-season pie. And if you’ve ever been intimidated by making a pie, this is the perfect way to try your hand at it; the flat crust and unfussy layering are deliciously foolproof. The result is a beautiful dessert that does double duty as an everyday indulgence and the star of your next backyard dinner party. Here’s how to make it!

What you’ll need:

  • Ingredients for Fresh Berry Slab Pie
  • 15 x 10 x 1-inch pan
  • Cooling rack
  • Electric mixer
  • 1 Medium bowl
  • 1 Large Bowl

How to:

1.  Heat oven to 450°F. Unroll pie crusts and stack one on top of the other on a lightly floured surface. Roll to 17 x 12-inch rectangle. Fit the crust into 15 x 10 x 1-inch pan, pressing into corners. Fold the extra crust under, even with edges of pan. Crimp the edges and then prick the bottom and sides of the crust with a fork.

2.  Bake 10 to 12 minutes or until golden brown. Cool completely on cooling rack.

3.  In a medium bowl, beat yogurt and cream cheese with an electric mixer on medium speed until smooth. Spoon into cooled baked crust. Refrigerate about 1 hour or until set.
