Mini Fruit Pizzas with Stacked Fruit Flowers

Light, sweet and full of fresh fruit—is there anything not to love about fruit pizza? These miniature versions can be assembled before your gathering or your can set out plain sugar cookies, the cream cheese topping and a variety of fruit flowers for people to design their own blooming fruit pizzas. Either way, it’s practically guaranteed that children and adults will enjoy this springtime treat. Here’s how to make them! 

Heat oven to 375°F. In medium bowl, stir Betty Crocker Sugar Cookie Mix, butter and egg until soft dough forms.

Roll dough on a floured surface until ¼-inch thick. Cut dough with a 3-inch circle cookie or biscuit cutter and place on an ungreased cookie sheet.

Bake for 5 to 7 minutes until edges start to turn light golden brown. Let cookies sit on cookie sheet for 2-3 minutes before moving to a cooling rack.

Using small cookie cutters (or paring knife), cut fruit into small flower shapes. Set aside.

In a medium bowl, beat together whipped cream, vanilla and Betty Crocker Whipped Cream Cheese Frosting.

Spread frosting evenly over sugar cookies.

Stack a variety of fruit flowers on top of each cookie and serve immediately.
