Mini Eggnog Bundt Cakes

Big holiday flavor in an itty, bitty Bundt. Betty Maker Haley Williams put her clever and creative twist on a classic Betty recipe to bring us these Mini Eggnog Bundt Cakes. Her adorable individually-sized cakes are destined to dazzle at Christmas dinner.

Inspired by a love of individually-sized desserts, Haley created this fun and festive recipe with entertaining in mind. These sweet little cakes have all the familiar flavors of everyone’s favorite holiday beverage. They’re sure to wow your guests at any holiday gathering. And likely have them all requesting seconds!

Starting with Betty Crocker™ Super Moist™ Yellow Cake Mix, Haley customizes the cake batter with plenty of warming spice, courtesy of ground nutmeg. She also adds a bit of holiday spirit (aka just a splash of spiced bourbon). Then she tops it with a simple nutmeg glaze for even more wonderful eggnog flavor, making these little Bundt cakes even more irresistible. Every melt-in-your-mouth bite gives you a little glimmer of holiday happiness.

Haley’s Tips

  • Mini fluted tube cake pans, also known as a Bundt-lette® pan, are miniature versions of the well-known Bundt® pan. If you don't have one, you can use a cupcake or muffin pan. You will need to adjust the baking time to 18 to 20 minutes.
  • Grease your mini fluted tube cake pans well, getting into all the crevices. This helps ensure your beautiful Bundt cakes don’t break when removed from the pan.
  • To make this recipe kid-friendly, omit the spiced bourbon and use 2 teaspoons of rum extract instead. For a more adult dessert, brush the Bundt cakes with bourbon before adding the glaze.
