Jolly Old St. Nicholas Pancake

A Christmas pancake in Santa’s likeness will win over even the pickiest of little eaters.

With constant visions of sugarplums dancing in my son’s head, sometimes it can be a challenge to convince him to eat a balanced breakfast during the holiday season. I’ve found creating pancakes in the likeness of our favorite Christmas visitor is a festive way to ensure everyone is gathered around the kitchen table.

You can make your own St. Nick using the classic Bisquick® Pancake recipe. Using a squirt bottle, draw the outline of the head, hat and beard separately on a griddle. Let set for approximately 30 seconds before filling in the rest of the head and beard. Cut provolone cheese to make the mustache and add chocolate covered almonds for the eyes (this satisfies any holiday sweet tooth). Carve a red apple for the nose and lips and spread a thin layer of seedless raspberry jelly on the hat. Right before serving, finish the portrait by squirting whipped cream on St Nick’s stocking hat.
