When baking two pumpkin pies at once, what should I change? If I want to bake both pies at the same time, do I need to adjust the temp or time?

Lucky you, when baking two Pumpkin Pies at the same time, you won't have to change a thing!  Because your pies are the same kind and in separate pans, they will bake in the same amount of time.  Position the rack in the lower third of the oven before baking, so the top of the pies will be in the middle of the oven.  Place the pies on the rack with equal amounts of space between them and the oven walls for best airflow and even baking.  If you were doubling the recipe in a larger pan, that would be a different story!
