Smoked salmon dinner - yum! You could go with a lighter menu or a heavier menu. A lighter menu could include a Wild Rice side dish. (I would use chicken broth instead of the beef broth and I would cover it and put it in a 350 oven so I didn't have to watch it closely.) Partner the rice side dish and salmon with a mixed greens salad and some purchased crusty rolls. For a heavier menu, you could serve garlic-smashed potatoes and steamed asparagus. A side that I tried recently and everyone loved was Green Beans with Blue Cheese but you need to be careful with the flavors - I'd pair it with simple boiled potatoes and the salmon. I piled green beans on a serving platter and it was lovely. Everyone loves tiny desserts served in shot glasses or a platter of fresh fruit. Have a fabulous dinner!
