lb extra-lean (at least 93%) ground beef

jar (16 oz) Muir Glen® organic mild salsa

cup Muir Glen® organic tomato sauce (from 15-oz can)

cups water

cups uncooked regular or multigrain elbow macaroni

cup Green Giant® frozen corn

cup shredded reduced-fat sharp Cheddar cheese (2 oz)
  • 1 In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • 2 Stir in salsa, tomato sauce and water. Heat to boiling. Stir in macaroni and corn. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until macaroni is tender.
  • 3 Sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted.

    The only reason for 4 instead of 5 spoons is that mine came out a little too tomato saucy for our tastes, but will definitely be making this again. I too, added a couple teaspoons of taco seasoning mix and it gave it just the right amount of punch for us.

    Made this for dinner tonight and loved it. Super easy and really good. I used medium salsa for a little zing - just a little zing, I don't like it too spicy. I also added 1 T of taco seasoning as someone else suggested - great addition, and served it with sour cream. Next time I will crush up some tortilla chips when I serve it.

    This was a hit at my table. So I didn't exactly make this the "healthy way." I added black beans. Also exchanged the salsa for petite cut diced tomatos with jalapenos which gave it a little extra flavor and zip and didn't have the problem of it being bland. I also added some mexican blend cheese. I WILL be making this again!
