Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, halved, thinly sliced
  • 1 green bell pepper, cut into strips
  • 1 cup Progresso™ Classic chicken broth (from 32-oz carton)
  • 1/2 cup beer
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1 can (10.5 oz) diced tomatoes with green chiles, undrained
  • 2 boneless pork loin chops, trimmed of fat and cut into 1/2-inch cubes (about 8 oz)
  • 1 tablespoon chopped fresh cilantro leaves
  • 1 tablespoon fresh lime juice
  • Cilantro leaves, if desired

Steps

    In 2-quart saucepan, heat olive oil over medium heat. Add onion and pepper; cook 4 to 5 minutes or until vegetables are tender. Stir in chicken broth, beer, chili powder, salt, cumin and tomatoes.

    Heat to boiling; reduce heat. Cover and simmer 5 minutes. Stir in pork; cover and simmer 5 to 8 minutes or until pork is no longer pink in center. Stir in chopped cilantro and lime juice. Garnish with cilantro leaves.

    You can substitute boneless skinless chicken breasts or thighs for the pork. Use 1/2 pound of whichever you prefer. Also you can use red, yellow or orange bell peppers instead of the green bell peppers.

    For a bit of crunch, garnish this soup with fried tortilla strips. Look for them in the produce or deli section of your grocery store.
