pounds fresh green beans, cut into 1- to 2-inch pieces

  • Southern "string" beans are traditionally simmered in a ham broth made with a ham bone or ham hock until tender and very flavorful. They're considered a real treat in the South. This recipe uses smoked ham or pork chops because they're easier to find.
