This Smoky Three-Bean Chili is so simple to make that you can prep it in just 10 minutes! Serve your easy three-bean chili with baked tortilla chips and green onions to add some crunch.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup chopped celery
  • 1 medium green bell pepper, chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 2 cans (14.5 oz each) no-salt-added diced tomatoes, undrained
  • 1 can (15 oz) spicy chili beans, undrained
  • 1 can (15 oz) kidney beans, drained, rinsed
  • 1 can (15 oz) black beans, drained, rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon finely chopped chipotle chile in adobo sauce (from 7- or 11-oz can)
  • 1/2 teaspoon adobo sauce (from can of chipotle chiles)
  • Crushed tortilla chips, if desired
  • Sliced green onions, if desired

Steps

    In 4-quart saucepan or Dutch oven, heat oil over medium-high heat. Cook celery, bell pepper, onion and garlic in oil 3 minutes.

    Stir in remaining ingredients except tortilla chips and green onions. Heat to boiling. Reduce heat; cover and simmer 30 to 40 minutes, stirring occasionally, until vegetables are tender and flavors are blended.

    Top individual servings with tortilla chips and green onions.

    If you find the chipotle chiles and adobo sauce in this Smoky Three-Bean Chili recipe a little too spicy, omit them and increase the chili powder to 2 teaspoons.

    Chipotle chiles are dried, smoked jalapeño chiles. They are available dry in bulk or canned in adobo, a spicy Mexican sauce made with chiles, herbs and vinegar. Chipotles and adobo add smoky and spicy flavor to dishes like three-bean chili. Look for chipotles canned in adobo sauce in your grocery store's Mexican-foods aisle.
