Ingredients

pound bulk pork sausage, cooked and drained

1 1/2

cups sliced fresh mushrooms (4 ounces)

1/2

cup sliced green onion

medium tomatoes, chopped (1 1/2 cups)

cups shredded mozzarella cheese (8 ounces)

1 1/4

cups Original Bisquick™ mix

cup milk

teaspoon salt

1/2

teaspoon pepper

1/2

teaspoon dried oregano leaves

Heat oven to 350ºF. Grease rectangular baking dish, 13x9x2 inches. Layer sausage, mushrooms, onions, tomatoes and cheese in baking dish.

Beat remaining ingredients with wire whisk or fork; pour over cheese in baking dish.

Bake uncovered 30 to 35 minutes or until golden brown and set.

Expert Tips

Flossie's Recipe Tips:
You can mix and match some of the ingredients. Try 1 pound sliced bacon, cooked and crumbed, instead of the sausage, and Cheddar cheese instead of the mozzarella.
There's no harm in splashing in a bit of hot sauce for those who like their eggs with a bit of kick!
Since this dish is packed full of almost everything you'll need for the meal, just serve it with sliced peaches and hot biscuits.
