Savory Fish Patties with Salsa

These elegant "burgers" are packed with flavor. Serve them as is, or use the mixture to fill pita pockets or sandwich rolls.

Ingredients

  • 3 cans (5 to 7 oz each) salmon or tuna, drained, flaked
  • 1 medium onion, finely chopped (1/2 cup)
  • 2 tablespoons lemon juice
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried marjoram leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 2 slices bread, torn into crumbs (1 1/3 cups)
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 cup salsa

Steps

    Mix all ingredients except oil and salsa. Shape mixture into 8 patties.

    Heat oil in 10-inch skillet over medium heat. Cook patties in oil about 8 minutes, turning once, until golden brown.
