Inspired by those scout cookies sold by girls in uniform, these scrumptious bars bring together the phenomenal flavors of coconut, caramel, and chocolate, in one easy (and easy to devour) cookie bar. But you don’t have to wait until cookie-selling season to enjoy these cuties. Look at all the irresistible layers! First, a coconut-brown sugar base is baked in a square pan. Then more coconut is layered, along with a simple caramel layer, made with caramel candies melted with decadently rich whipping cream and butter. Heated hot fudge topping becomes the easy chocolate drizzle as the final indulgent flavor on these moist and delicious bars.

From our Betty Crocker Cookies cookbook, the only hard part about making these sinfully rich treats is waiting until they’ve set up before you dive into them. Well, ok, if we’re going to be honest, there’s another hard part…trying not to eat the entire pan yourself…at least, not all in one sitting.

Ingredients

Crust

  • 1/2 cup butter, softened
  • 1/4 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups shredded coconut, toasted

Caramel Filling and Topping

  • 3 tablespoons heavy whipping cream
  • 2 tablespoons butter
  • 25 caramels (from 11 or 14 oz bag), unwrapped
  • 1/4 cup hot fudge topping

Instructions

    Heat oven to 350°F. In medium bowl, mix 1/2 cup butter and the brown sugar until creamy. Add the flour and 1/2 cup of the coconut; mix well. Press into ungreased 9-inch square pan.

    Bake 15 minutes or until the edges are light brown.

    Meanwhile, in 1 1/2-quart saucepan, heat whipping cream, 2 tablespoons butter and the caramels over medium-low heat, stirring frequently, until caramels are melted and mixture is smooth. Remove from heat.

    Sprinkle 3/4 cup of the remaining coconut over hot crust. Pour hot caramel filling over coconut, carefully spreading to sides of the pan. Sprinkle with remaining 1/4 cup coconut.

    In small microwavable bowl, microwave hot fudge topping uncovered on Medium (50%) in for 30 to 60 seconds or until topping is thin enough to drizzle. Drizzle topping over bars. Let cool completely, about 30 minutes. For bars, cut into 5 rows by 5 rows.
