Quick Brown Rice and Onions

With only four ingredients and 15 minutes, you can put together a dish that outshines plain ol’ rice. MORE + LESS -

Ingredients

tablespoon butter or margarine
1
small onion, chopped (1/4 cup)
1 1/4
cups Progresso™ chicken broth (from 32-oz carton)
1 1/2
cups uncooked instant brown rice

Steps

    Heat butter in 1 1/2-quart saucepan over medium heat.

    Cook onion in butter 2 to 3 minutes or until tender. Add broth; heat to boiling. Stir in rice. Heat to boiling; reduce heat.

    Cover and simmer 5 minutes. Remove from heat; stir. Cover and let stand 5 minutes. Fluff rice lightly with fork.

Expert Tips

  • Go ahead and use beef or vegetable broth instead of the chicken broth.
  • Add 1/2 cup each of shredded carrots, thawed frozen green peas and sliced almonds for Quick Brown Rice and Onion Pilaf.
