Potato Bacon Casserole

Ingredients

box Betty Crocker™ julienne potatoes

cups boiling water

tablespoons butter

cup half-and-half

cup frozen sweet peas

slices bacon, cooked and crumbled (about 1/2 cup)
1/4
cup grated Parmesan cheese

Topping

cup garlic croutons, coarsely crushed

tablespoon butter, melted
1/2
teaspoon chopped fresh rosemary leaves

    Heat oven to 400°F.

    In ungreased 8-inch (2-quart) glass baking dish, stir together sauce mix (from julienne potato box), boiling water and 2 tablespoons butter until butter is melted and sauce mix is dissolved. Stir in potatoes (from julienne potato box), half-and-half, frozen peas, bacon and Parmesan cheese. Bake 30 to 35 minutes or until potatoes are tender.

    Meanwhile, in small bowl, mix Topping ingredients. Stir potatoes; sprinkle topping over potatoes. Bake 5 to 7 minutes longer or until topping is golden brown. Let stand 5 minutes before serving (sauce will thicken as it stands).

Expert Tips

  • Use whatever croutons you have in your pantry. If you have plain croutons, add 1/4 teaspoon garlic powder to the topping.
  • An easy way to crush the croutons is to place in a 1-quart resealable food-storage plastic bag, and crush with a rolling pin or meat mallet.
