Pineapple and Ham Fried Rice

This easy dish is perfect for using up leftover rice and comes together in a flash. White rice is stir-fried with garlic, ginger, veggies and ham before getting tossed with chunks of sweet pineapple.

Ingredients

  • 3 tablespoons canola oil
  • 3 cups cooked and cooled white rice (leftover rice is perfect)
  • 1 clove garlic, finely chopped
  • 1 teaspoon grated fresh gingerroot
  • 3/4 cup thinly sliced green onions
  • 1/2 cup diced carrot
  • 1/2 cup diced ham
  • 2 eggs, beaten
  • 2 teaspoons soy sauce
  • 1/2 cup diced fresh or canned pineapple

    Have ingredients chopped, diced and ready to go, since this goes quickly once you get started.

    In 12-inch skillet or wok, heat oil over high heat until hot and shimmering. Add rice, breaking up with wooden spoon as you stir to coat rice in oil.

    Add garlic and gingerroot; cook 60 seconds before adding green onions, carrot and ham. Stir to combine. Push rice to one side; pour in eggs. Scramble eggs while gradually stirring into rice until eggs are fully cooked. Season with soy sauce. Remove from heat; fold in pineapple.

    Fried rice comes together super quick, so be sure to prepare and chop all your ingredients ahead of time, and have them ready to go!

    You can absolutely use freshly cooked rice in this dish, but I think it works even better with leftover rice. Since leftover rice tends to be pretty dry, it’s perfect for high-heat, quick cooking like stir-frying!

  • We’re all familiar with take-out fried rice, but it’s actually an easy and economical dish to make at home. You just need about 20 minutes and a hot pan. It also might be the perfect fridge-cleanout dish. Not only does it make great use of that dry, leftover rice from dinner last night, it’s also the perfect reason to use up leftover bits of veggies and protein you find lurking in the depths of your refrigerator. This version begins with three seasonings I always include in my fried rice: garlic, ginger and lots of green onions. The mix-ins can include pretty much any veggies you have on hand; I just went with carrots here, but peas and/or zucchini are also great additions. Pineapple and ham round out the dish for a craveable sweet and salty combination that’s sure to please.
