Peppered Beef Roast with Horseradish Sauce

Ingredients
Roast
- 2 tablespoons black peppercorns, cracked
- 1 boneless beef sirloin tip roast (3 lb)
Horseradish Sauce
- 3/4 cup heavy whipping cream
- 3 tablespoons prepared horseradish
- 1/2 teaspoon ground mustard
- 1/4 teaspoon salt
Instructions

Step1Heat oven to 325°F. Grease shallow roasting pan or broiler pan with vegetable shortening or spray with cooking spray.

Step2Place peppercorns on large plate. Roll beef in pepper; press pepper into roast with heels of hands. Place roast on rack in pan. Insert ovenproof meat thermometer so tip is in thickest part of roast.

Step3For medium-rare, roast uncovered about 1 3/4 hours or until thermometer reads 135°F. Remove from oven and cover loosely with foil; let stand 15 to 20 minutes until thermometer reads 145°F. For medium, roast uncovered about 2 hours until thermometer reads 150°F. Remove from oven and cover loosely with foil; let stand 15 to 20 minutes until thermometer reads 160°F.

Step4Meanwhile, mix all ingredients for horseradish sauce. Cover and refrigerate until ready to serve.

Step5Transfer roast from pan to cutting board; cut into slices. Serve with Horseradish Sauce.
