Here's a terrific way to cook a lot of bacon at once, when you're entertaining a crowd.

Ingredients

  • 24 slices bacon (from two 16-oz pkgs)

Steps

    Heat oven to 400°F. Arrange bacon slices on rack in broiler pan and on wire cooling rack in rectangular pan, 15x10x1-inch (do not overlap slices).

    Bake 15 to 20 minutes (do not turn) or until light brown.

    Increase oven temperature to 450°F. Bake 2 to 3 minutes longer or until bacon is crisp. Carefully remove pans from oven (grease will be very hot). Immediately remove bacon from pans with tongs to serving platter; cover with foil to keep warm. Serve immediately. When bacon grease is cool; pour into empty can or disposable cup. Let stand until it solidifies, discard.

    To make bacon ahead, prepare through Step 2. Cool slightly; remove from racks to dinner plate. Cover and refrigerate no longer than 24 hours. When ready to serve, place bacon slices in rectangular pan, 15x10x1-inch. Bake at 450°F about 5 minutes or until hot and crsip.
