Ingredients

  • 2 cups Gold Medal™ flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated orange peel
  • 1/3 cup butter or margarine, softened
  • 1 cup orange-flavored carbonated beverage (8 oz)
  • 2 eggs
  • Powdered sugar, if desired

Steps

    Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.

    In medium bowl, beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl occasionally. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.

    Bake 20 to 25 minutes or until toothpick inserted in center of cupcake comes out clean. Cool 5 minutes. Remove cupcakes from pan; place on cooling rack to cool. Sprinkle with powdered sugar or frost with desired frosting.

    Substitute 1 box white cake mix for the cupcakes above. Make cake mix as directed on box for cupcakes expect — use 1 1/4 cups orange-flavored carbonated beverage, 1/3 cup vegetable oil, 3 egg whites, and add 1 teaspoon grated orange peel with the beverage. Bake and cool as directed on box. Sprinkle with powdered sugar or frost cupcakes. 24 cupcakes.
