Muffin-Tin Green Chile Meatloaves

Ingredients

Meat Loaves

lb lean (at least 80%) ground beef

cans (4.5 oz each) Old El Paso™ chopped green chiles
1/2
cup shredded Mexican blend cheese (2 oz)
1/2
cup finely crushed tortilla chips (about 2 oz)

tablespoon (from 1-oz package) Old El Paso™ original taco seasoning mix
1/2
teaspoon salt

egg

Tomato Salsa

1/2
cup diced tomatoes
1/4
cup chopped green onions

tablespoons finely chopped fresh cilantro leaves

tablespoon fresh lime juice
1/4
teaspoon salt

    Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.

    In large bowl, stir Meat Loaf ingredients until well mixed. Divide mixture among muffin cups, pressing evenly into cups.

    Bake 15 to 18 minutes or meat thermometer inserted in center of loaf reads 160°F.

    Meanwhile, in small bowl, mix Tomato Salsa ingredients. Serve with meat loaves.

Expert Tips

An easy way to crush the tortilla chips is to place them in a resealable food-storage plastic bag, and roll over the chips with a rolling pin until finely ground.

For a more spicy topping, add 1 teaspoon of chopped jalapeño chile to the tomato mixture.
