Ingredients

Pimiento Cheese

  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/4 cup mayonnaise
  • 2 tablespoons (from 2-oz jar) drained chopped pimiento
  • 2 oz (from 8-oz package) cream cheese, softened
  • 5 drops red pepper sauce
  • 1 tablespoon milk

Bites

  • 4 slices soft sandwich bread
  • 12 (from 14-oz package) cocktail-size smoked link sausages
  • 1 tablespoon butter, melted
  • 1/4 teaspoon dried dill weed

    Heat oven to 400°F. LIne cookie sheet with cooking parchment paper.

    In small microwavable bowl, mix all Pimiento Cheese ingredients except milk. Cut crusts from bread; flatten with rolling pin. Spread each slice with 1 1/2 tablespoons of the Pimiento Cheese (reserve remaining Pimiento Cheese for dip).

    Cut each slice into 3 rectangular pieces with sharp knife. Place a sausage on one end of each rectangle; roll up. Place rolls, seam side down, on cookie sheet. In small bowl, mix butter and dill weed; brush over each roll-up.

    Bake for 7 to 8 minutes or until edges are golden brown.

    Meanwhile, stir milk into remaining cheese mixture.

    Just before serving, microwave cheese mixture uncovered on High 30 seconds to warm. Serve dip with bites.

    You can use any soft bread to make these bites. A sandwich loaf bread is more rectangular in shape making less waste when the crusts are trimmed. Use the crusts to make dry or toasted bread crumbs for topping egg and vegetable dishes or even salads.
