From our own Betty Crocker Simply Delicious Diabetes Cookbook, these amazing personal-size pizzas are perfect for anyone looking to eat a little lighter. They start with a scratch cauliflower crust and are topped with decadent mozzarella cheese and basil. They'll be ready for the oven in just 25 minutes.

Ingredients

Crust

  • 1 bag (12 oz) frozen riced cauliflower
  • 1 egg, beaten
  • 1/2 cup shredded mozzarella cheese (2 oz)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup shredded Parmesan cheese (1 oz)

Toppings

  • 1/4 cup pizza sauce
  • 1 plum (Roma) tomato, thinly sliced
  • 1/2 cup mozzarella cheese pearls or bocconcini (small fresh mozzarella cheese balls)
  • 2 tablespoons chopped fresh basil leaves

    Heat oven to 425°F. Line large cookie sheet with cooking parchment paper; spray with cooking spray.

    Cook cauliflower as directed on bag. Drain cooked cauliflower and spread on paper towels; cool 10 minutes. Place another paper towel over cauliflower, and pat tops dry.

    In medium bowl, mix egg, shredded mozzarella cheese, salt and pepper. Stir in cauliflower; mix well.

    Sprinkle Parmesan cheese in 4 small mounds, 1 tablespoon each, on cookie sheet. Place generous 1/2-cup of cauliflower mixture on top of each mound of Parmesan cheese. Gently shape and press each into a 4 1/2-inch-diameter, 1/4-inch-thick patty, smoothing edges.

    Bake 20 to 25 minutes or until lightly brown. Using pancake turner, gently lift patties from parchment paper and turn over. Top patties evenly with pizza sauce and tomato slices and mozzarella balls. Bake 6 to 8 minutes or until cheese is melted. Top with basil.
