Make mincemeat out of cookie making! Bake tender cookie layers that sandwich fruity mincemeat filling. It's one-pan easy.

Ingredients

  • 3 cups Original Bisquick™ mix
  • 1 cup granulated sugar
  • 1/4 cup milk
  • 3 tablespoons butter or margarine, softened
  • 1 egg
  • 1 1/2 cups prepared mincemeat
  • 1/2 cup powdered sugar
  • 1 teaspoon finely shredded orange peel
  • 1 tablespoon orange juice

Steps

    Heat oven to 375°F. Grease rectangular pan, 13x9x2 inches.

    Stir Bisquick, granulated sugar, milk, butter and egg in medium bowl until dough forms.

    Pat half of the dough in pan, using floured fingers, to within 1/2 inch of edges. Spread mincemeat over dough. Pat out remaining dough to same size on waxed paper. Place paper side up over mincemeat; peel off waxed paper.

    Bake 25 to 30 minutes or until golden brown. Cool slightly.

    Stir remaining ingredients until thin enough to drizzle. Drizzle over top. For bars, cut into 8 rows by 6 rows.

    Mincemeat at one time was exactly what its name implies; minced meat with a mixture of various chopped fruits and spices. Most mincemeat today retains the chopped fruit and spices and may have beef fat, but it does not contain meat.
