Maple Bratwurst Dinner

Ingredients

  • 1 lb small red potatoes, halved
  • 1 cup ready-to-eat baby-cut carrots
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1 medium onion, cut into wedges
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 cup maple-flavored syrup
  • 4 teaspoons spicy brown mustard
  • 1 teaspoon caraway seed
  • 4 smoked bratwurst links, cut crosswise into thirds (12 oz)

    Heat oven to 425°F. Spray 18×13-inch half-sheet pan with cooking spray. In pan, combine potatoes, carrots, bell peppers and onion. Drizzle with oil; sprinkle with salt. Stir to coat.

    Roast uncovered 25 minutes.

    In small bowl, combine maple syrup, mustard and caraway seed; mix well. Add bratwurst to vegetables on pan. Drizzle maple syrup mixture over vegetables and bratwurst. Using spatula or large spoon, carefully mix vegetables and bratwurst to coat.

    Roast uncovered 10 to 15 minutes or until vegetables are fork-tender.

    Although this recipe is simple, you can get it in the oven in minutes by cutting up the peppers, onions and bratwurst the night before or earlier in the day. Be sure to cover and refrigerate them. The potatoes should be cut just before final preparations because cut sides will brown when exposed to air.

    What's in your refrigerator? Other mustards such as Dijon or honey-mustard would be delicious with these flavors.
