Ingredients

  • 2 tablespoons Dijon mustard
  • 2 tablespoons Italian dressing
  • 1 large clove garlic, minced
  • 1/2 cup soft bread crumbs
  • 2 tablespoons chopped fresh Italian parsley
  • 1 tablespoon chopped fresh thyme
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons butter or margarine, melted
  • 4 boneless skinless chicken breasts (about 1 lb)

Steps

  • 1
Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In small bowl, mix mustard, Italian dressing and garlic.
  • 2
In another small bowl, mix bread crumbs, parsley, thyme and pepper. Stir in butter.
  • 3
Spread mustard mixture on both sides of each chicken breast; place in pan. Spoon bread crumb mixture evenly on top of chicken; press in firmly.
  • 4
Bake uncovered 15 to 20 minutes or until juice of chicken is clear when center of thickest part is cut (170°F). If desired, cut chicken breasts diagonally into slices before serving.

  • This flavorful chicken would be great served with mashed potatoes and green beans or broccoli florets.
