Ingredients

Pineapple Sauce

  • 1 can (8 oz) crushed pineapple
  • 1/2 cup pineapple preserves
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 to 1/2 teaspoon red pepper flakes

Pancakes

    In 1-quart saucepan, combine all sauce ingredients. Heat to boiling; reduce heat to medium. Cook and stir about 2 minutes or until mixture is slightly thickened. Remove from heat; cool to room temperature.

    Heat oven to 300F. Place Canadian bacon slices on 15x 10-inch baking sheet. Place in oven until hot and ready to serve.

    In medium bowl, stir together Bisquick, milk and eggs. Spoon about 2 tablespoons batter for each pancake onto hot griddle. Cook until edges are dry; turn. Cook until golden brown.

    To make sliders; place one slice Canadian bacon on each of 10 pancakes; top with pineapple sauce and additional pancake.
