Spicy, snappy radishes complement fresh sweet corn in this recipe that makes the most of a bountiful summer harvest.

Ingredients

  • 4 cups fresh whole kernel corn
  • 1/2 cup sliced radishes
  • 1 shallot, finely chopped
  • 1 teaspoon chopped fresh thyme leaves
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon agave nectar or honey

Steps

    In medium bowl, mix corn, radishes, shallot and thyme.
  • 2
    In small bowl, stir lime juice, oil and agave nectar with whisk until blended. Just before serving, pour dressing over salad and toss to coat.

    You can mix the salad ingredients ahead and refrigerate in a bowl or plastic bag overnight. Toss with dressing just before serving.

    Like things spicy? Finely chop a small red Fresno or jalapeño chile, seeded if desired, and stir into the corn mixture.
