Strips of tender, succulent sirloin steak, red potato wedges, sweet onions, and Brussels sprouts are simmered in a simple balsamic-beef broth before being topped with melty, gooey Gruyère cheese. Ingredients

  • 1 lb boneless beef sirloin steak
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 cup butter
  • 4 cups thinly sliced sweet onions, cut in half (about 2 large)
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons sugar
  • 2/3 cup beef broth (from 32-oz carton)
  • 2 medium red potatoes, thinly sliced (2 cups)
  • 8 oz Brussels sprouts, trimmed, cut into quarters (3 cups)
  • 1/2 cup shredded Gruyère cheese

    Cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices. Sprinkle with 1/4 teaspoon of the salt and the pepper.

    Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add beef; cook 3 to 4 minutes, stirring frequently, just until beef is browned. Remove skillet from heat. Transfer beef to plate with slotted spoon; cover with foil and keep warm.

    Add butter and onions to skillet. Cook uncovered 5 minutes, stirring frequently. Stir in vinegar, sugar and the remaining 1 teaspoon salt. Reduce heat to medium. Cook an additional 3 minutes longer, stirring frequently.

    Stir beef broth and potatoes into onion mixture. Cook covered 8 minutes, stirring occasionally. Stir in Brussels sprouts; cook an additional 5 to 6 minutes longer or until potatoes and Brussels sprouts are tender.

    Stir in beef; cook until heated. Remove from heat. Sprinkle with cheese; cover and let stand 1 to 2 minutes or until cheese is melted.
