Fattoush is a Middle Eastern bread salad full of fresh vegetables and herbs in a light citrus dressing. Our spin adds the toasted pita at the last minute so the bread doesn't get soggy.

Ingredients

  • 3/4 cup lemon juice
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cloves garlic, finely chopped
  • 1 cup diced unpeeled English (seedless) cucumber
  • 3 plum (Roma) tomatoes, diced (1 3/4 cups)
  • 1/2 red bell pepper, diced (1/2 cup)
  • 3 cups thinly sliced red cabbage
  • 1/2 cup chopped fresh Italian (flat-leaf) parsley
  • 1/4 cup chopped fresh mint leaves
  • 2 pita rounds, toasted and torn into 1-inch chunks

    In large bowl, beat lemon juice, oil, salt, pepper and garlic with whisk. Add remaining ingredients except pita; toss well to combine.

    Divide among 4 serving plates. Top with pita pieces.

    Seedless cucumbers are also called hothouse or English cucumbers. They have a sweeter flavor and are longer and thinner than regular cucumbers. Any seeds are tiny and very tender. The skin is also tender, so they don't require peeling.

    As a convenient alternative to squeezing fresh lemons, look for the bright yellow plastic bottles of frozen fresh lemon juice (7.5 oz) in the freezer aisle of your grocery store.
