Visit the Mediterranean without leaving home. This salad combines fresh salad greens with olives, artichoke hearts and feta cheese for authentic Greek taste.

Ingredients

  • 2 bags (10 oz each) mixed salad greens
  • 1 can (6 oz) pitted ripe olives, drained
  • 1/4 cup Italian vinaigrette dressing
  • 1 jar (6 to 7 oz) marinated artichoke hearts, undrained
  • 1/4 cup crumbled feta cheese
  • 1 small zucchini, thinly sliced

Steps

    In large bowl, toss greens and olives. Add dressing and artichoke hearts with marinade; toss to mix.

    Sprinkle cheese over salad. Top with zucchini.
