If fun can be delivered in a sweet treat, this is it. A cross between cookie and cake with a cereal bar topping, these bars are ready to party! From our latest Cookies cookbook, confetti crunch cookie bars are unique treats are as fun to look at as they are to eat. The confetti base has a moist, cake-like texture that’s more sturdy like a cookie. They are topped with a decadent chocolate-covered cereal mixture, which adds crunch as well as chocolatey goodness. And then two types of sprinkles add a fiesta of fun.

Sink your teeth into one of these sweets and get an explosion of homemade taste in every bite. The cookie base has the flavors of vanilla, butter, and cream cheese all rolled into one. And then the cereal layer is a scrumptious hit of chocolate and crunch.  

Serve these cheerful bars at just about any casual gathering, year around. Bring these fun treats to a PTA meeting, a neighborhood potluck or make to serve when your kids have a sleepover.

Ingredients

Cookie Base

  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 egg
  • 2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plus 3 tablespoons rainbow sprinkles
  • 1 tablespoon plus 2 teaspoons rainbow nonpareils

Cereal Topping

  • 1 bag (11.5 oz) milk chocolate chips (2 cups)
  • 3 cups chocolate-flavored O-shaped toasted whole-grain oat cereal
  • 1/4 cup vanilla baking chips

Instructions

    Heat oven to 350°F. Line 13x9-inch pan with foil, leaving 2-inch overhang on sides; spray bottom with cooking spray.

    In large bowl, beat sugar, butter and cream cheese with electric mixer on medium speed until fluffy. Beat in egg and vanilla until smooth. Add flour, baking powder, baking soda and salt and beat on low speed until well blended. Stir in 1/4 cup of the sprinkles and 1 tablespoon of the nonpareils. With floured hands, press mixture into bottom of pan (mixture will be sticky).

    Bake 23 to 27 minutes, until edges are set, and top is light golden brown. Place pan on cooling rack; cool completely, about 1 hour.

    In large microwaveable bowl, microwave chocolate chips on High for 1 to 1 1/2 minutes, stirring once, until chips are softened and can be stirred smooth. Stir in cereal until well coated. Add 1/4 cup of the sprinkles and mix well. Spread on top of cooled bars.

    In small microwaveable bowl, microwave vanilla chips on 50% power for 30 to 45 seconds, stirring once, until chips are softened and can be stirred smooth. Drizzle over cereal; sprinkle with remaining 3 tablespoons sprinkles and 2 teaspoons nonpareils. Refrigerate 1 hour or until chilled and drizzle is set. Remove foil. For bars, and into 7 rows by 6 rows.
