Cod Cakes with Red Pepper Aioli

An easy way to have cooked fish on hand is to make enough for this recipe while making fish for another meal. Cool, cover and refrigerate the leftover fish for up to 3 days to get a jump start on this recipe. Or you can cook the fish up fresh, following the easy cooking directions below.

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup roasted red peppers (from a jar)
  • 2 cloves garlic, peeled
  • 3/4 lb cooked cod, walleye or tilapia
  • 1 cup soft bread crumbs
  • 1/2 cup sliced green onions (8 medium)
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic, finely chopped
  • 2 eggs, beaten
  • 2 tablespoons olive oil

    In blender or food processor, place mayonnaise, roasted peppers and 2 cloves garlic. Cover; process until smooth. Transfer to small bowl. Cover; refrigerate until serving time.

    In large bowl, stir together cod, bread crumbs, onions, parsley, chopped garlic and eggs, breaking up fish as necessary. Using about 1/2 cup mixture for each patty, shape into 6 (3-inch) patties (patties will be soft).

    In 12-inch nonstick skillet, heat oil over medium heat. Cook patties in oil 6 to 8 minutes, turning once, until golden brown. Drain on paper towels. Serve cod cakes with aioli.

    If you don't have any cooked fish on hand, here's how to cook it quickly and easily: Heat oven to 375°F. Place fish in a baking dish; drizzle with olive oil and sprinkle with salt and pepper. Bake uncovered 12 to 15 minutes or until fish flakes easily with fork. Cool to room temperature. Pat with paper towels to remove excess moisture and use as directed.
