Chicken and Noodle Supper

Ingredients

  • 2 1/2 cups water
  • 2 (3-oz.) pkg. chicken-flavor ramen noodle soup mix
  • 1 1/2 cups cubed cooked chicken
  • 1 cup frozen peas and carrots
  • 2 tablespoons chopped onion or 2 teaspoons instant chopped onion
  • 1 (2.5-oz.) jar sliced mushrooms, drained

Steps

    In large saucepan, bring water to a boil. Add ramen noodles, seasoning packets, chicken, peas and carrots and onion; mix well. Cook over medium-high heat for 4 to 6 minutes or until vegetables are tender.
  • 2
    Stir in mushrooms; cook until thoroughly heated.

  • Enjoy this quick meal with warm pita bread wedges topped with cheese, milk and chocolate chip cookies.
  • When camping, substitute an 8-ounce can of chunk chicken in water, drained, in place of the cubed chicken. Substitute a 15-ounce can of peas and carrots for the frozen vegetables.
