tablespoons olive oil

large shallots, thinly sliced (about 1 cup)

cup packed brown sugar
1/4
cup red wine vinegar
1/4
teaspoon salt

oz chèvre (goat) cheese
Food Should Taste Good™ peppercorn blend brown rice crackers, as desired

    In 1-quart saucepan, heat oil over medium-high heat. Add shallots and brown sugar; cook about 5 minutes to soften shallots, stirring constantly. Reduce heat to medium, and cook until reduced to jam consistency. Stir in vinegar and salt. Transfer to serving bowl.

    Serve with goat cheese and crackers.

Expert Tips

  • This recipe can easily be doubled and kept in a container in the refrigerator.
  • Adding a few sprigs of fresh herbs gives a nice alternative flavor to this jam.
