Caprese Waffle Sandwiches

No need for bread in this fun twist on the Italian classic salad, which uses waffles made easy with Original Bisquick mix.

Ingredients

  • 2 cups Original Bisquick™ mix
  • 1 egg
  • 1 1/3 cups milk
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 cup tomato jam, if desired
  • 8 oz fresh mozzarella cheese, sliced
  • 6 to 8 small plum (Roma) tomatoes, sliced
  • Fresh basil leaves

Steps

    Heat waffle maker; grease with vegetable oil or shortening. In large bowl, stir together Bisquick mix, egg, milk, Parmesan cheese, 2 tablespoons oil and the salt until smooth.

    Pour batter onto center of hot waffle maker. (Check manufacturer’s directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.

    Spread 1 tablespoon tomato jam on one side of each waffle. Layer with mozzarella cheese, tomatoes and a few basil leaves; fold waffle over. Return to waffle maker. Close lid; cook 1 minute. Serve immediately.
