Broccoli with Herbed Butter Sauce

Step1Trim off large leaves from broccoli; remove tough ends of lower stems. Wash broccoli; peel if desired. For spears, cut lengthwise into 1-inch wide stalks. For pieces, cut lengthwise into 1/2-inch-wide stalks, then crosswise into 1-inch pieces.

Step2Heat 1 inch water (salted if desired) to boiling in Dutch oven; add broccoli. Heat to boiling; reduce heat. Cover and simmer 10 to 12 minutes, stirring occasionally, until stems are crisp-tender.

Step3Prepare Herbed Butter Sauce while broccoli is cooking. Serve sauce over broccoli.
